Unique plot (2hectare 32ares 32centiares, half in production) of old Grenache noir vines in goblet shape on the southern slope of an east-west facing hill. On a clay-limestone base, flow of schists and red-blackish mica-schists, with an exceptional iron content. Extreme weather conditions. The plot is crossed over 200 days a year by an icy wind from the northwest. Late pruning.
Intensive green work: disbudding, inter-cores, load regulation, leaf stripping. Search for perfect phenolic maturity while retaining maximum freshness and fruit. Manual harvest, stored and transported in a refrigerated truck. 20-day maceration with extraction by gentle daily punching down. Run-off in new barrels. Aging on lees, without sulfur until the end of the malolactics. Regular topping with a Mouvèdre / Syrah blend (5 to 7% depending on the vintage). Bottling without filtration.
Endearing, impressive wine, extremely changeable depending on the place and the occasion, evolving in the glass for several hours, of breathtaking length with tight tannins of a memorable velvety. Maturity 10 years, aging potential 30 years.
All the bottles displayed in our website are stocked in our cellar in Bordeaux.
