Château CANON 2014
Château Canon is a 34-hectare estate located in Saint-Émilion , Bordeaux . It is classified as Premier Grand Cru Classé B in the latest Saint-Émilion wine classifications. In 1760, the lieutenant of the frigate and privateer of the same name - Jacques Kanon, originally from Blayais - acquired the Domaine de Saint-Martin thanks to the profits from the races he carried out on behalf of Louis XV at the expense of English ships. He immediately undertook the construction of an elegant residence in the vicinity of which he developed the monoculture of vines on all these plots, a very rare strategy at that time. Later in 1919, the Fournier family took over the reins of the château before handing them over to Chanel in 1996. Château Canon occupies a limestone terrace facing southwest, at an altitude of 87 meters where Merlot and Cabernet Franc are grown.
The Château Canon 2014 is a blend of Merlot (72%) and Cabernet Franc (28%) . The plot vinification is carried out in stainless steel vats. Malolactic fermentation takes place in stainless steel vats (2/3) and barrels (1/3). The aging lasts 18 months in medium to long-toasted French oak barrels , 80% of which are new .
