The first Sancerre estate to be certified in biodynamic cultivation, since 2006. Jean-Dominique Vacheron, rather involved in viticulture, works in duo with his cousin Jean-Laurent, an oenologist who studied with great Burgundy estates. If their red sancerres are often talked about, the whites, of high maturity, are no longer left out. They turn out to be mineral, with a good consistency in the powerful Les Romains cuvée, from one of the finest and most sunny terroirs of Sancerre, an expression of flint clays. Vinification in wooden vats, which widens the tight side that Sauvignon on flint can present. The extraction and aging of the reds lead them, in their youth, to a certain rigidity, somewhat in the spirit of the wines of the Trapet estate, in Burgundy. In any case, they must be waited for at least two to four years. The domain is getting closer to the second star.
