RHUM A1710 - White Rum - Renaissance - Decanter collection - 52% 2016
A1710 is part of a resolutely modernist spirit that wants to combine the best of tradition and innovation for an authentic result, refined, audacious ... in short exceptional. Its creation dates back to 1710, and owes its essence to the will of Jean Assier. Today it is his direct descendant, Yves Assier de Pompignan who is at the origin of the new philosophy that drives the distillery and Habitation du Simon (taken over by the brand). This distillery is also equipped with a rather unique Charentais copper still, completed with 7 trays bearing the sweet name of "Belle Aline".
The challenge faced by Stéphanie Martin - Maître de Chai de la Maison - during the creation of this Renaissance cuvée, was to reach the perfect balance between freshness, complexity, lightness and power: a rum destined to be savored both during an aperitif and digestive. A goal achieved with brilliance thanks to a meticulously thought and realized process. Firstly a slow fermentation (5 to 6 days) of fresh cane juice using oenological yeasts was carried out, then the distillation took place in the "Belle Aline" and the eaux-de-vie finally been placed some time in barrels of ex-Cognac. The carafe was handmade for this edition of the 2016 vintage limited to 1080 bottles numbered.
