Domaine Naudin-Ferrand (Claire Naudin) - Orchis Mascula 2017
This cuvée is the expression of several plots with high qualitative potential: good exposure, good plant material, excellent harvest quality.
This led us to an alternative vinification, which, for us, allows the optimal expression of Pinot noir: vinification in whole harvest (not destemmed), without added sulphites.
100% Pinot Noir aged 41, 10 and 8 years.
Area: “En Bully” 0.75 ha, “La Grande Corvée de Bully” 0.20 ha, “En Foigery” 0.70 ha
Vinification:
Manual harvest with very careful sorting. Tanking without destemming or SO²: inerting with dry ice (frozen CO²). After 5 days of intracellular fermentation, a first punching down triggers alcoholic fermentation, which will last around 10 days, with some punching down but no pumping over (since no sulfur). The pressing is gentle (0.7 bars). The barrels, 80% new, were placed by gravity and without aeration. MLF was completed in mid-November and the aging on lees continued until bottling. Compressed air withdrawal, assembly by gravity. Put without filtration. Addition of sulphites in very moderate doses, to guarantee transport and aging.
