DOMAINE GAUBY - Les Calcinaires 2018
Domaine Gauby is located in Côtes-du-Roussillon, in the village of Calce. The estate became well-known in 1985, under the influence of Gérard Gauby when he decided not to sell in bulk to negociants but to create a wine under his own label. The vineyard is planted with Grenache, Syrah, Carignan and Mourvèdre for the red grape varieties, and with Grenache Gris, Grenache Blanc and Macabeu for the white grape varieties. The property covers 85 hectares but only half is planted with vines, some of which are 120 years old. The terroir is mainly made up of chalk, from which the village takes its name (“calcaire” in French). The vineyard is conducted in certified organic farming.
Les Calcinaires rouge is a blend of Syrah (50%), Mourvèdre (25%), Grenache Noir (15%) and Carignan (10%). The winemaking is traditional, with complete destemming and a maceration of 2 to 4 weeks. Fermentation takes place with indigenous yeasts, without chaptalization or acidification. The wine is aged for 10 months, 20% in barrels and 80% in tanks. It is bottled without fining or filtration.
