Bimber Distillery is located in London, England. It was founded by whisky enthusiasts, with a mission to produce a high-quality Single Malt with character, using traditional methods rarely seen today. All the barley is grown on one farm. It is then traditionally floor malted, crushed by hand and slowly fermented for seven days in wooden washbacks that were hand-made at their own cooperage. They use direct fire to heat the small copper stills, and the spirits matured in hand-selected barrels. Finally, the whisky is blended and bottled on site at the distillery. Bimber's first barrels were filled on May 26, 2016 and were released three years later, in September 2019 - the limited release of 1,000 hand-numbered bottles sold out in 3 hours. Since 2020, Bimber has launched a wider range of new Single Malt whiskies.
The Re-charred Oak Casks Edition comes from the selection of hand charred American oak barrels by Bimber coopers at level #4 (also known as the "Alligator char"). The deep charring process caramelises the sugars in the wood, adds a layer of filtering carbon to the surface of the cask and influences the whisky giving it distinctly sweet, rich and fruity flavours. 5,000 bottles were produced.
