La Croix Dompierre - Haut Médoc 2018
Château Dompierre is located in Saint-Laurent-Médoc, near Pauillac in Bordeaux. Michel Aroldi, born in Libourne, has a long farming history. In 1993, he bought Château Plain-Point in Fronsac and established himself as a very talented winemaker. Attracted by an evolution in terms of growth, Michel Aroldi acquires Château Dompierre on the terroir of Pauillac. He attaches great importance to respecting the ecosystem, the terroir and the vintage. Thus, from the vine to the ageing at the winery, he sets up a process of sustainable agriculture, inspired by simple and natural rules.
La Croix Dompierre is a blend of Cabernet Sauvignon (85%) and Merlot (15%), grown on a gravel plot and a clay-limestone plot. After the manual harvest, the grapes are destemmed and sorted. Fermentation takes place in wooden vats with indigenous yeasts. The must cap is immersed and the fermentation lasts 5 weeks. Aging lasts 18 months in wooden vats from Nadalié, composed of fine-grained French oak.
