Giacomo Borgogno - Barolo Cannubi 2013
Giacomo Borgogno e Figli is a wine estate based in the Piedmont, north-west of Italy. The company was founded by Bartolomeo Borgogno in 1761. Borgogno is famous for its practice of holding wines back for more than a decade before release: Cesare Borgogno, who took charge in the 1920s, began the signature policy of keeping back wines for late release. In 2008, the estate was sold to the Farinetti family. The winery is situated in the center of Barolo town, with cellars dug into the hillside. Borgogno uses traditional winemaking methods including indigenous yeasts, long fermentations and the use of large Slavonian oak barrels.
The Barolo Cannubi 2013 is made from Nebbiolo grown on the prestigious Cannubi vineyard. The spontaneous fermentation is carried out in cement tanks for 12 days followed by a submerged cap maceration for 40 to 50 days. After the racking off started the malolactic fermentation which lasted 15 days. Ageing lasted 4 years in Slavonia oak casks (4,500 litres) followed by 6 months of ageing in bottle before being released on the market.
Grape variety: 100% Nebbiolo
