Domaine Gueguen - Sacy 2020
Domaine Gueguen is located in Chablis, in Burgundy. It was created in 2013 by Céline and Frédéric Gueguen, born in winegrowers’ families. They have 25 hectares of vines, mostly planted with Chardonnay in the Bourgogne and Chablis appellations. They also cultivate Sauvignon Blanc for the AOC Saint-Bris, Pinot Noir for Irancy and the old grape variety called Sacy. The vineyard is managed according to the principles of sustainable viticulture and is certified in High Environmental Value (HVE).
The Cépage Confidentiel cuvée is made entirely from Sacy, an old grape variety threatened with extinction. Céline and Frédéric Gueguen are the only winegrowers to cultivate this unique plot; the old 80-year-old vines have been preserved and the dead vines replaced in 2018. After the mechanical harvest, the grapes are put in direct pressing and then cold settled. Alcoholic fermentation takes place with indigenous yeasts and malolactic fermentation is complete. The wine is aged on fine lees, in stainless steel vats for about 10 months.
