Les Cailloux du Paradis belongs to Claude Courtois and is located in Soings-en-Sologne, near Cheverny. Claude Courtois manages the vineyard with his son, Etienne and Julien, and cultivates 13 hectares of Gamay, Cabernet Franc, Côt (Malbec) and Cabernet Sauvignon in red varieties as well as Sauvignon Blanc and Pineau d'Aunis and other indigenous varieties. They work with respect for nature, without chemical intervention and using atypical winemaking techniques.
Evidence is entirely made from Menu Pineau. This grape variety is also known as Arbois or Orbois, and is the flagship grape variety of Loir-et-Cher.
