Domaine Francois Carillon - Bourgogne Chardonnay 2019
Domaine François Carillon is located in Puligny-Montrachet, in Burgundy. Created in 2010, the estate now covers more than 16 hectares in the municipalities of Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin, and produces more than 15 different appellations, mainly in Chardonnay. Respect for the environment is one of the fundamental values to which François Carillon is attached. Thanks to integrated pest management, very few inputs are used and the few treatment products are of natural origin.
The vinification of both white and red grapes is carried out at the estate in accordance with the Burgundian and family tradition. After receipt of the harvest and controlled pressing of the grapes (pneumatic press), the musts are vatted for a few hours before settling. They are then directly placed in oak barrels, where the alcoholic and malolactic fermentations will take place. The wines are aged in barrels and on their lees, with light dodinages for at least 12 months, before being racked. They will then follow a second mass aging of about 6 months to homogenize each cuvée, refine the aging and enrich it. The percentage of new barrels used varies according to the appellations, but all the cuvées, from Bourgogne Aligoté to Premiers crus, receive daily attention and all go through aging in oak barrels, which come mainly from the forests of Tronçais or Allier. Bottling takes place during favorable lunar periods. The bottles are then stored in a cool, dry environment for some time so that the wine stabilises there, before being labeled and put on sale.
The Bourgogne Chardonnay comes from 33 to 60-year-old vines located in Puligny-Montrachet and Meursault, on clay-limestone soils. Fermentations are carried out in oak barrels (10% new barrels) with 12 months aging and light stirring.
