Domaine Pierre Boisson (Boisson Vadot) - Hautes côtes de Beaune 2019
Boisson-Vadot / Anne & Pierre Boisson is a group of Burgundy domains based in Meursault, in Burgundy. The wines are collaboratively produced in the cellar of the Boisson family, who have been leading winemakers in Meursault for over two centuries. The 10-hectare estate was run by Bernard Boisson-Vadot until 2016 and his son and daughter, Pierre and Anne Boisson have been taking over since the 2017 vintage. Some of the wines are bottled under the Boisson-Vadot label, while certain parcels of the estate are allocated to Pierre Boisson and Anne Boisson and the wines carry their names.
Pierre Boisson's Hautes-Côtes de Beaune is made entirely from Pinot Noir, the average age of which is 25 years and from two plots; “Sous La Velle” in Baubigny and “Les Chaignots” in Orches. The bunches macerate cold for 5 days then the alcoholic fermentation is carried out in stainless steel vats with pumping over and punching down. After pressing, the wine is decanted for 10 days. Malolactic fermentation takes place in barrels and aging lasts 18 months in barrels, 20% of which are new. The wine is bottled by gravity.
