Domaine Saint Sylvestre - Rouge - Jeroboam 2019
Domaine Saint-Sylvestre is located in the village of Puechabon, in the Languedoc. It belongs to Sophie and Vincent Guizard, and their first vintage was produced in 2011. Their vineyard covers 8 hectares, on three plots located at an altitude of 320 meters. To this 8-hectare vineyard was added a planter in 2015, which has the distinction of having been planted with the wild plan and was grafted in 2018 with Carignan from a very old plot of Sophie's grandfather. Vincent Guizard worked at Domaine de Montcalmès and at Mas Jullien. He masters the art of grafting, to which he has devoted himself since 2008, so the annual dead stumps are replaced by the American rootstock that Vincent will graft about 3 years later with the appropriate grape variety, resulting from mass selection that he selects every year in the vineyard. Through their work on the soil and each vine, as well as respect for biodiversity and the terroir, the quality of their wines keeps on increasing year after year.
Domaine de Saint Sylvestre Rouge is a blend of Syrah (70%), Grenache (20%) and Mourvèdre (10%). The grape varieties are harvested manually, by grape variety and by plot, then destemmed, crushed also by grape variety and by plot. The grape varieties are put in stainless steel vats separately, ancestrally drawn on the feet. The vatting is long and with tasting, as soon as Sophie and Vincent judge that they have extracted enough because they do not have an oenologist, they clarify, blend the press juice and free-run juice and then age each grape for 24 months in burgundy barrels of 1 wine.
