Domaine Tortochot - Morey Saint Denis 2020
Domaine Tortochot is located in Gevrey-Chambertin, in Burgundy . The estate has belonged to the Tortochot family for 4 generations. In the 19th century, Paul Tortochot was a modest winegrower from the Place des Marroniers. His son Félix married Louise Liébaut from Morey Saint Denis, the neighboring village. Gabriel, Félix's son, managed the 12-hectare estate for many years before moving away to leave it to his two daughters, Brigitte and Chantal . They have 4 Village appellations including one in Morey Saint Denis. The objectives of the estate are to protect the natural ecosystem, flora, animals and insects on the ground, to put more emphasis on the life of the soil and to ensure the survival of local flora and fauna. . The entire vineyard was converted to organic farming from 2003, with certification from 2010.
The grapes are harvested manually, after having been previously sorted in the vineyard to eliminate those which are not perfectly healthy or sufficiently ripe. The bunches are completely de-stemmed and then lightly crushed to release the juice and promote fermentation. The berries are placed in vats and then cooled between 14 and 15°C. Temperature control allows cold pre-fermentation maceration for 4 to 5 days before the start of fermentation. Once fermentation has started, the must is relieved at the end of the day and the cap is punched twice a day. The must is analyzed to determine the alcohol and acidity levels in order to properly measure the chaptalisation. Fermentation takes place without adding cultured yeast. Once fermentation is complete, devatting and then pressing take place. The free run juice and the press juice are assembled. After letting the juice rest for 24 hours, the wine is transferred to the aging cellar where it is placed in new oak barrels (100% for the Grands Crus, 50% for the Premiers Crus and 25% for the appellation wines). Town). The wines are bottled after 15 to 18 months of aging in barrels.
