Domaine Les Hautes Terres - Joséphine - Brut Nature 2019
Domaine Les Hautes Terres is located in the Aude Valley, in the cirque of Roquetaillade, in Languedoc . This terroir, which dates back 50 million years, is made up of ocher marl with deposits of fossils of small shells, turritelles and nummulites. In 2000, Gilles Azam bought his first vineyard, he now owns a 13-hectare estate. He plays with grape varieties, altitude, orientation and organic cultivation to produce elegant and complex wines.
Joséphine is a blend of Chardonnay, Chenin Blanc and Mauzac , grown on plots at altitude (between 450 and 600 meters) on a soil of clay and sandstone. Vinification and aging on lees are carried out in barrels for 9 months, followed by aging on slats for 24 months . The wine is disgorged without the addition of expedition liqueur, using the Brut Nature dosage.
