In Champagne, these rosé wines are generally produced by blending red wine (made from locally grown Pinot Noir and/or Meunier) with white base wines; these wines are called Rosé d’assemblage. However, skin maceration of black grapes is also authorised, then the wine is “bled”, that is to say drawn off from the skins; these wines are called Rosé de Saignée.
