Maison Camille Thiriet - Burgundy Vézelay - Champs Cervin 2020
Maison Thiriet is located opposite the Château de Comblanchien, in Côte-d'Or, in the heart of Côte-de Nuits , in Burgundy . After years of experience in both production and sales, Canadian-born cellar master Matt Chittick and adopted Burgundian Camille Thiriet demonstrated prudence and ambition in order to realize a long-term dream. , that of producing Burgundy wines under their own label. They met while working for the Domaine de Bellene. 2016 was the first vintage of Maison Thiriet, it was made in a small 20m 2 garage and only four barrels of Bourgogne Blanc and three barrels of Côte de Nuits Villages were produced. Everything is done in an artisanal way, pumping over in a bucket, treading, ratchet press. No inputs or native yeasts are added. The bottles are labeled and waxed by hand.
This Vézelay Village Champs Cervin is a limited edition of 2,045 bottles. Alcoholic fermentation begins spontaneously with indigenous yeasts in barrels. The malolactic fermentation is carried out in the same container. The aging lasts 12 months, with 20% new barrels.
