Domaine Boris Champy - Hautes Côtes de Beaune Altitude 399 2019
The Domaine Boris Champy is located in Nantoux , in the Côte de Beaune in Burgundy . Boris Champy is from Champagne and has a degree in oenology. He worked for 10 years in Napa Valley in California before becoming technical director of Maison Louis Latour. He was also manager and oenologist at the famous Clos des Lambrays. All terrain, he was the initiator of an association for the protection of the environment, is a triathlete, crossed the bay of San Fransisco by swimming and completed the pilgrimage from Dijon to Santiago de Compostela. The Domaine was founded by Didier Montchovet in 1984. With the complete management of the vineyard, the cellar and the stocks, the Domaine Didier Montchovet is renamed Domaine Boris Champy. Boris Champy enthusiastically believes in the future of the Hautes-Cotes, thanks to their altitude in a context of global warming. He wishes to continue to raise the reputation of this little-known appellation. The objective is to show the subtle differences between climates and terroirs, with different types of soil, exposure to the sun, slope inclinations, etc. The estate was the first in Burgundy to receive Demeter biodynamic certification .
Bourgogne Hautes-Côtes de Beaune Altitude 399 is made from Pinot Noir grown on three plots: “En Bignon” and “Le Clou” from Nantoux and “Pierres Percées” from Saint Romain. A small percentage of whole bunches is fermented with delicate extraction during vinification. Fermentation takes place in wooden fermentors and the wine is aged in barrels for 12 months , 15% of which are new.
