The Akkeshi Distillery is located in Hokkaido, in rural northern Japan . It was established by Keiichi Toita , President and Representative Director of Kenten Co. Ltd. Its story begins in 2013 when the company began testing aging batches of raw spirits purchased from two existing distilleries in Japan. Construction of the distillery began in 2015; the area surrounding the Akkeshi distillery is made up of wetlands, with a layer of peat and below, soft, low ground extending up to 50 meters below the Earth's surface. It is impossible to build anything on such soil without taking special measures. For this reason, they used the Columbus construction method, which involves removing the soil from under the foundation and putting polystyrene infill in its place. A year later, Forsyths employees in Scotland visit and set up the stills and other equipment for the start of the distillation process. The team are dedicated to whiskey making using traditional Scottish distillation methods to create whiskey similar to Islay Malts. Akkeshi's first Malt was released in 2018.
Akkeshi Daikan is the sixth edition of the " 24 Solar Term Series " which is inspired by the ancient Asian calendar according to which a year is divided into 24 solar seasons. "Daikan" is the coldest season of winter. During this period, the natural phenomenon called Kearashi (frost smoke) occurs. The bottle label depicts the rise of the Kearashi in Akkeshi Bay.
