Château de Beru - Montserre - Chablis 2019
Château de Béru is located in Béru, in the Chablis appellation in Burgundy . The Château, classified as a historic monument, was built around a centuries-old wine heritage. The lunar calendar painted on the facade of the current entrance testifies to the importance of the cycles of the moon in the organization of agricultural work. In the 19th century, due to the Phylloxera crisis, the vines were uprooted. It was from 1987 that Eric de Béru exercised his planting rights and replanted 15 hectares of vines, including Clos Béru, which he operates directly. The other plots are leased. In the early 2000s, Athénaïs , the current owner, initiated negotiations with a view to resuming rents. Since 2006, the estate has been committed to an organic farming approach and will obtain certification in 2020. Since 2010, biodynamic practices have been implemented at the estate. At the same time, a “Les Vins d'Athénaïs” trading activity was created, developed in partnership with the producers that the estate supports and accompanies.
The harvest is manual and the grapes sorted in the vineyard then transported to the press in small crates. The pressing lasts several hours and is divided into micro-levels to gently extract the juice. Fermentation takes place in barrels of different sizes (228, 350 and 400 liter barrels, demi-muids and vats), with little new wood. The aging is long, and the wines are aged for at least 2 winters on their lees.
Montserre is a plot located at altitude, exposed to the four winds and bordered by a hedge of trees that shelter birds, forming a virtuous ecosystem. The terroir is made up of dense layers of superimposed limestone, with white pebbles on the surface.
