Domaine Francois Carillon - Burgundy Pinot Noir 2020
Domaine François Carillon is located in Puligny-Montrachet, in Burgundy . Created in 2010, the estate now covers more than 16 hectares in the municipalities of Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin, and produces more than 15 different appellations, mainly Chardonnay. Respect for the environment is one of the fundamental values to which François Carillon is attached. Thanks to integrated pest management , very few inputs are used and the rare treatment products are of natural origin.
The vinification of white and red grapes is done at the estate in accordance with the Burgundian and family tradition. After reception of the harvest and controlled pressing of the grapes (pneumatic press), the musts are placed in vats for a few hours before settling. They are then directly sung in oak barrels, where the alcoholic and malolactic fermentations will take place. The wines are aged in barrels and on their lees, with light dodinages for at least 12 months, before being racked. They will then follow a second mass aging of about 6 months to homogenize each cuvée, refine the aging and enrich it. The percentage of new barrels used varies according to the appellations, but all cuvées, from Bourgogne Aligoté to Premiers crus, receive daily attention and all go through aging in oak barrels, which mainly come from the forests of Tronçais or Allier. . Bottling takes place during favorable lunar periods. The bottles are then stored in a cool, dry environment for some time so that the wine stabilizes there, before being labeled and put on sale.
The Bourgogne Pinot Noir comes from old vines over 60 years old located in Puligny-Montrachet and the hamlet of Corpeau, on clay-limestone soils. After total destemming and cold maceration, the musts are lightly punched before being settled and then barreled ( 10% new barrels ). Fermentation and aging last an average of 12 months.
