Herve Souhaut - Sainte Epine 2021
Domaine Romaneaux Destezet is located in Ardèche , on the right bank of the Rhône opposite the Hermitage hill. It was created in 1993 by Hervé Souhaut and has grown over the years through the planting of new vines and the successive purchases of various plots often planted with old vines (50 to 100 years old). The current area of the estate is 5 hectares and Hervé Souhaut also has an additional business of purchasing grapes. The grape varieties used are of local origin and representative of the North of the Rhone Valley. Sensitized from the start of his activity by the need to produce wines that were as natural as possible in order to best express the potential of the terroir, Hervé Souhaut turned to the production of grapes from agriculture that respects the environment. environment. But convinced that we should not stop at this stage, he decided, under the impetus of winegrowers adept at natural vinification and helped by his training as a biologist, to produce wines without oenological additives .
Sainte Epine is made from century-old Syrah vines. The whole harvest undergoes a long maceration at low temperature with mechanical extraction by punching down. The wine is aged on fine lees for 12 months . Bottling is carried out without filtration with less than 25 mg/L of sulphur.
