Hwayo Distillery is located in Yeoju Province, near Seoul in South Korea . The distillery originally produced soju, a traditional Korean alcohol. It is South Korea's only whiskey distillery, and the first whiskey produced exclusively from rice . The master distiller Saehee Moon draws inspiration from centuries-old gestures acquired in the manufacture of soju to offer an innovative whisky.
Hwayo X.Premium is produced with Japonica short rice, a round and tender rice, polished to 10%. The fermentation of the must occurs by adding water, drawn from a depth of 150 meters in a natural rock, and yeasts which transform the starch present in the grains of rice into sugar. This must is distilled in a pot still, at low pressure to obtain fine and delicate aromas. It is then aged in American oak barrels.
