Wasenhaus - Kanzel - Spätburgunder 2020
Weingut Wasenhaus is located in Baden , Germany . Christoph Wolber and Alexander Götze met in Burgundy while studying oenology at the local school in Beaune. At the same time, they were both working full time in some of the biggest biodynamic estates in Burgundy such as those of Pierre Morey, Leflaive, Comte Armand... Shortly after becoming roommates, they hatched plans to return in Germany and set up their cellar in Baden. In Christoph's home region, they look for suitable plots and select them meticulously: one on the slopes of the Ehrenstettener Oelberg , and the other in the Ehrenkirchener Kirchberg . In recent years, they have bought several plots, some with very old vines. They grow their grapes, but also buy grapes from friendly companies with a similar philosophy that are used in the production of Gutedel. Their first vintage was released in 2016 and it was a great success. Christoph and Alexander carry out gentle extractions, with very little punching down during fermentation, and occasional stirring to ensure healthy fermentation from the start. Sulfur is used judiciously and is only applied after malolactic fermentation. The wines are all aged in oak barrels.
The Kanzel cuvée comes from a vineyard that is a little colder and less exposed to the sun, at the top of a limestone cliff. Half of the Pinot Noir comes from a mass selection planted by Doctor Henrik Möbitz, and the other half comes from old German clones. Fermentation takes place with 50% whole bunches in wooden vats. It begins with a carbonic maceration and continues with a few pigeages. The wine is aged 18 months in French oak barrels of several wines.
