Anne and Jean-François GANEVAT - Of All Beauty - Magnum
Domaine Jean-François Ganevat is located in La Combe de Rotalier in the Jura , France. The estate has been family owned since 1650 and is currently run by Jean-François Ganevat , who trained and worked until 1998 at Domaine Jean-Marc Morey in Chassagne-Montrachet, before returning to his family estate. The production of Ganevat is small, but made up of around forty different cuvées aimed at highlighting the terroir, the grape variety or the winemaking style. The 13-hectare estate has been certified biodynamic since 2014. Jean-François Ganevat uses ancient and individualized winemaking techniques: destemming is done by hand, no new oak is used, the white wines are aged on the lees for a minimum of two years and, since 2006, it has completely eradicated the use of sulphur.
The estate also sources grapes from Alsace, Savoie and Beaujolais for the production of cuvées under the Vin de France appellation. These cuvées, blended with purchased grapes and those from the estate, allow Jean-François Ganevat and his wife Anne to use all the varieties of native grape varieties and to produce unique, declassified wines.
De Tout Beauté is a blend of Gamay and Jura grape varieties , vinified in tapered vats. The wine undergoes a fresh semi-carbonic maceration , without pumping over or punching down with indigenous yeasts. It is unfiltered and no sulfur is added during bottling.
