Château Combel la Serre - Pure fruit from the causse - Magnum 2021
Château Combel la Serre is located in the region of Cahors in the Lot, in the South-West . It was founded in 1998 by Jean-Pierre and Martine Ilbert . Jean-Pierre worked in a cooperative cellar, which he decided to leave to settle on the plot of Combel on which they live and which is covered with vines. La Serre is the name of the plot opposite where the agricultural buildings are located. In the first years, they sold the wine "in bulk" by the hectolitre in order to start the investments necessary for the operation: construction of a new cellar, purchase of vats, winemaking equipment, etc. In 2003, when the son, Julien, officially moved in with his parents, they took a turn and decided to sell their wine in bottles. Today, the estate extends over 23 hectares, cultivated in certified organic farming .
Pur Fruit du Causse is made entirely from Côt Noir (Malbec). The grapes come from the property but also from the purchase of grapes on the limestone Causse , located between 320 and 350 meters above sea level on clay-limestone soils. The vinification is traditional with a fortnight's maceration in stainless steel and cement vats. Aging is carried out in vats and on lees .
