Le Clos Rouge - Piccolo 2021
Le Clos Rouge is located in the commune of Saint-Jean-de-la-Blaquière, in the Terrasses du Larzac appellation in Languedoc . From 2 hectares in 2013, the estate has extended since 2020 to 13 hectares with the addition of new plots of Cinsault, Carignan, Grenache Blanc and Noir, and Syrah. The work in the vineyard is done without phytosanitary inputs from industry, with mechanical and manual weeding. The use of manure and decoctions (nettle, horsetail, fern and comfrey) being systematically associated with sulfur and copper sprays. The organic farming certification has been in place since the 2018 vintage.
Piccolo is made from old Cinsault vines . The harvest is destemmed then vatted by gravity. Fermentation occurs spontaneously with indigenous yeasts. Pumping over and pigeage in vats are reasoned according to the tasting to avoid over-extraction.
