David & Nadia - Aristargos 2021
David & Nadia Estate is located at Paardebosch Farm in the Swartland region of South Africa . The estate was created by the couple David and Nadia Sadie , both qualified in viticulture and oenology. They produced their first vintage in 2010 while still working for their former employers. In 2013, David resigned and Nadia joined him in 2016 to devote herself entirely to their vineyard. About half of the grapes they work with come from the Paardebosch farm where the winery is based, and the rest come from other farms, all located in Swartland. They carry out three projects: the David & Nadia cuvées (grapes used throughout Swartland representing its soils, vineyards and people), the Topography cuvées (only grapes grown in the Siebritskloof of the Paardeberg where they are based) and the plot cuvées Skaliekop and Hoë-Steen. They have a minimal intervention and organic farming approach in the vineyard as well as in the cellar. They quickly became one of Swartland's leading wine producers , and considered among the most exciting in South Africa .
Aristargos 2021 is a blend of Chenin Blanc (49%), Clairette Blanche (9%), Sémillon (8%), Grenache Blanc (7%), Roussanne (7%), Verdelho (6%), Viognier (6%) , Marsanne (4%) and Colombard (4%) . The grapes come from 19 different vineyards spread across Swartland, while always having a connection to the Paardeberg and its granite soils. The grapes were harvested on 21 different dates. The grapes were pressed in whole bunches and fermented naturally then aged for 11 months in old neutral French oak barrels . The Sémillon grapes fermented on their skins for 1 week before being pressed and aged in a very old 2,500 liter cask for a year. The Colombard was also fermented on the skins (for 5 days) and aged in an old oak barrel. A batch of Chenin blanc has been fermented and matured in a concrete egg .
