La Croix Dompierre - Haut Medoc 2020
Château Dompierre is located in Saint-Laurent-Médoc , near Pauillac in Bordeaux . Michel Aroldi , born in Libourne, is heir to a long peasant tradition. In 1993, he bought Château Plain-Point in Fronsac and established himself as a very talented winemaker. Attracted by an evolution in terms of vintage, Michel Aroldi acquires Château Dompierre on the terroir of Pauillac. He attaches great importance to respect for the ecosystem , the terroir and the vintage. Thus, from the vine to the breeding, he sets up a process of reasoned agriculture , inspired by simple and natural rules.
La Croix Dompierre is a blend of Cabernet Sauvignon (85%) and Merlot (15%) , grown on a plot of gravel and a clay-limestone plot. After the manual harvest, the grapes are de-stemmed and then sorted. Fermentation takes place in wooden vats with indigenous yeasts. The cap of marc is immersed and the vatting lasts 5 weeks. The aging lasts 18 months in wooden vats from Nadalié, made of fine-grained French oak.
