The Four Pillars - Bel Air 2020
The Domaine des Quatre Piliers is located in Noyers-sur-Cher in the Loire Valley . It belongs to Valentin Desloges , son of a winegrower from Touraine. He trained at renowned estates: Vincent Sipp in Alsace, Château Mangot in Saint-Emilion, Thierry and Paul Pillot in Chassagne-Montrachet and Raphäel Coche at Coche-Dury in Meursault. Its 10 hectare vineyard is divided into 25 plots, worked like small gardens and converted to organic farming . Passionate about the impact of barrels and trained in various wine-growing regions in complementary aging practices, Valentin Desloges dries the stave oak for a few years before supervising the manufacturing process of his custom-made barrels. This is part of a virtuous circle of production, in harmony with the eco-responsible approach of the Four Pillars.
The harvest is done manually to preserve the quality of the fruit and treat it gently. The wines ferment with native yeasts. The alcoholic fermentations take place in stainless steel vats , before allowing the malolactic fermentations to take place in barrels of 2 or 5 wines , from great classified growths from Bordeaux for the Cabernet Franc and the Côt, and from Burgundy for the Pinot Noir. The whites ferment exclusively in wood, with different proportions of new wood depending on the vintages: 10% for Chapter I (mixing barrels, demi-muids and 350 liters), 20% in Burgundian barrels for the great Sauvignon Blanc vintage and 30% for Chenin Blanc.
