The Neisson Distillery is located in Carbet , in Martinique . It was created in 1932 by the Neisson brothers. Jean, a chemical engineer by training, has devoted his professional life to improving distillation techniques. Jean's descendants, Claudine and then his son Grégory, have taken up the family torch. The transition to organic farming began in 2013, and in 2016 the first AOC Martinique organic rum was offered to consumers. Gradually, all of the land, more than 40 hectares, is experiencing the same evolution. After years of research, Neisson uses its own strains of native yeasts , selected from those naturally present on the distillery's canes. Reasoned choice of crop varieties for their adaptation to the typology of each plot, control of watering to save water, efficient treatment of effluents: everything contributes today to the production of high quality agricultural rums in harmony with the ecosystem of Neisson lands.
This edition comes from the Clos Godinot plot, located in Carbet at an altitude of 245 meters. This very sloping plot benefits from significant thermal amplitudes, which makes it possible to obtain a higher than average sugar level. The slow fermentation lasted 4 to 5 days, the maximum duration allowed for AOC Martinique.
