Champagne Chavost - Blended White - Brut Nature - Jéroboam
Champagne Chavost is located in Chavot-Courcont, in the Marne Valley in Champagne . The estate was founded in 1946 by around twenty winegrowers from the village. Since 2019, Fabian Daviaux , a trained oenologist, has decided to transform the initial cooperative by exploiting 5 hectares of vines with the aim of creating winegrowers' champagnes. Upon his arrival, he converted the vineyard to organic farming and committed to preserving the environment and its terroir. He develops an atypical range, with as few inputs as possible and without the addition of sulphites.
The White Blend is made from Chardonnay (50%) and Meunier (50%) . The vines are cultivated on a clay-limestone terroir facing north. The harvest is manual, at optimal maturity. Vinification is carried out in stainless steel vats (70%) and barrels (30%), without the addition of sulphite. The champagne is bottled without dosage .
