Domaine Gilles Troullier - Indigènes 2021
Domaine Gilles Troullier is located in Estagel, in Roussillon . Gilles Troullier began his career with the Chapoutier family in the Rhône. At the end of the 1990s, the Chapoutiers created the Domaine de Bila-Haut in Roussillon and entrusted its management to him. At the same time, he bought a few plots of vines and began making wine on his own. Today, Gilles Troullier's estate extends over 6 hectares. The plots are located at an altitude of more than 350 meters, mainly on granite. Its entire vineyard is managed biodynamically, without certification . Fermentations begin spontaneously with native yeasts, and very little sulfur is used during vinification.
Indigènes is made from old Carignan vines. Vinification is carried out in old barrels, then the wine is aged for 10 months in jars .
