Bénédicte and Stéphane TISSOT - Spirale - Sweet wine raisined on straw 2018
For years now, Domaine Stéphane Tissot has become an essential reference for Jura wines. Maurice Tissot, father of André Tissot and grandfather of Stéphane, owned 3 hectares of vines (vinified in a cooperative) and 25 hectares of agricultural land. In 1956, he decided to plant vines for each of his four sons: Jacques, Jean-Louis, Daniel and André. The latter inherits 38 acres, which will become the André and Mireille Tissot estate, today managed by their son Stéphane.
Stéphane Tissot is a rebellious spirit who appropriates traditions while sublimating them. After his studies in Viticulture/Oenology, he joined his father at the family estate in 1989. He gradually took charge of the estate and adopted organic farming in 1999, then switched to biodynamics in 2004. They now own 43 hectares planted with classic Jura grape varieties: Savagnin, Chardonnay, Poulsard, Trousseau and Pinot noir.
Spirale is made from partially fermented grape must produced from raisined grapes . The grapes were harvested at the start of the 2018 harvest, then placed on straw in an attic for 4 months . After this longer than normal raisining, the must was fermented naturally.
