Domaine Vincent Dauvissat - Chablis 1er Cru Vaillons 2018
Domaine Vincent Dauvissat is located in Chablis , Burgundy . Founded in 1931 by Robert Dauvissat, the estate has been passed down from father to son for three generations. Robert's son, René, is the one who made the reputation of the Domaine. Vincent started working with his father, René, in 1976 and today runs the Domaine. Vincent Dauvissat farms around 12 hectares of meticulously maintained vines, using sustainable, organic and biodynamic methods, without certification. These vines (Vaillons, Séchets, Fôrets among the Premiers Crus and Preuses and Les Clos among the Grands Crus) are located on hillsides underlain by Jurassic limestone. Vincent Dauvissat also produces a Chablis Villages and a Petit Chablis.
Chardonnay grapes are naturally grown and harvested by hand. No destemming is carried out and malolactic fermentation occurs spontaneously. Unconventional for Chablis, Dauvissat forgoes batonnage (mixing to increase contact with the lees). Vincent Dauvissat is also one of the rare Chablis producers to use oak barrels during aging, although the barrels used are between 6 and 8 years old.
