La Croix Dompierre - Haut Médoc 2022
Château Dompierre is located in Saint-Laurent-Médoc , near Pauillac in Bordeaux . Michel Aroldi , born in Libourne, is heir to a long peasant tradition. In 1993, he bought Château Plain-Point in Fronsac and established himself as a very talented winemaker. Attracted by an evolution in terms of vintage, Michel Aroldi acquired Château Dompierre on the Pauillac terroir. He attaches great importance to respecting the ecosystem , the terroir and the vintage. Thus, from vines to breeding, he implements a sustainable agriculture process, inspired by simple and natural rules.
La Croix Dompierre is a blend of Cabernet Sauvignon (85%) and Merlot (15%) , grown on a gravel plot and a clay-limestone plot. After the manual harvest, the grapes are destemmed and then sorted. Fermentation takes place in wooden vats with native yeasts. The cap of marc is immersed and vatting lasts 5 weeks. Aging lasts 18 months in wooden vats from Nadalié, made from fine-grained French oak.
