Champagne Chavost - Rosé de Saignée - Brut Nature
Champagne Chavost is located in Chavot-Courcont, in the Marne Valley in Champagne . The estate was founded in 1946 by around twenty winegrowers from the village. Since 2019, Fabian Daviaux , a trained oenologist, has decided to transform the initial cooperative by exploiting 5 hectares of vines with the aim of creating winegrowers' champagnes. Upon his arrival, he converted the vineyard to organic farming and committed to preserving the environment and its terroir. He develops an atypical range, with as few inputs as possible and without the addition of sulphites.
Rosé de Saignée is a blend of Pinot Noir (67%) and Meunier (33%) . The vines are cultivated on a clay-limestone terroir facing north. The harvest is manual, at optimal maturity. Maceration takes place in stainless steel vats followed by aging in French oak barrels, without adding sulphite. The champagne is bottled without dosage .
