Domaine Cassagne et Vitailles - Les Homs 2021
Domaine Cassagne et Vitailles is located in Montpeyroux, in Languedoc . The estate was founded in 2015 by two friends: Matthieu Rollin and Nicolas Seffusatti . The 7 hectare vineyard is divided into several plots, reflecting the diversity of the Mediterranean terroirs between Languedoc and Roussillon. The duo favors organic composts, controlled grass cover, low yields and manual labor. They practice biodynamics on plots replanted with mass selections. The harvests are late to bring maturity and the small stainless steel vats allow the juices of each plot to be isolated. The cellar is built from Fontvieille stone blocks for its thermal inertia. The aging is long, mainly in barrels from Chappin (which supplies the largest Burgundian estates such as Coche-Dury and Romanée-Conti). The wines are aged for 12 to 36 months or more, then refined in concrete eggs.
Les Homs is made from Grenache from the plot of the same name. After a late harvest and a long vatting, the wine is aged for 6 to 8 months in concrete eggs .
