Champagne Billecart Salmon - Brut Rosé
Maison Billecart-Salmon is located in the village of Mareuil-sur-Aÿ, in Champagne . It was founded in 1818 after the marriage of Nicolas François Billecart and Elisabeth Salmon, and the property is now managed by the 7th generation with Mathieu Roland-Billecart . The vineyard extends from the Côte des Blancs to the Montagne de Reims over 100 hectares and they source their grapes from a total area of 300 hectares in 40 crus of Champagne. The vat room is mainly concentrated on small thermoregulated vats of 47 hectoliters which allow to respect the traceability of the grape varieties and the plots . This vinification cru by cru and grape variety by grape variety allows to preserve all the nuances of the expression of the terroir. Maison Billecart-Salmon practices cultivation methods aimed at preserving the environment and promoting biodiversity .
Billecart-Salmon Rosé is made from Chardonnay from the different crus of the Marne (40%), Pinot Noir from the Montagne de Reims of the Grande Vallée de la Marne (30%) - part of which is vinified as red - and Meunier from the Vallée de la Marne and the Coteaux Sud d'Épernay (30%). The vinification is carried out in vats with malolactic fermentation. Reserve wines are used for the blend (40%). The wine is aged on slats for 36 months . It is bottled with a dosage of 5 g/L .
