Domaine Aurore Bachelet - Hautes Côtes de Beaune Red 2023
Domaine Aurore Bachelet is located in Santenay, south of the Côte de Beaune in Burgundy . With a degree from a business school and steeped in international experience, Aurore chose to reconnect with her roots in Burgundy. After training in viticulture and oenology, she perfected her skills for five years alongside her father, Vincent Bachelet. At the same time, she invested in the development of her own estate. Aurore produces the two emblematic grape varieties of Burgundy: Pinot Noir and Chardonnay. For each vintage, she strives to respect the Burgundian identity with vinification that is as non-interventionist as possible.
Hautes-Côtes de Beaune is made from Pinot Noir whose vines are around 45 years old, grown on clay-limestone soil. After manual harvesting, the grapes are put into cold pre-fermentation vatting . Fermentation takes place in vats, with regular manual punching down and watering. The wine is aged for 12 months in oak barrels , then 4 months in stainless steel vats .
