Audemus Spirits is a micro-distillery located in Cognac . It was founded by Miko Abouaf in 2013. He is the pioneer of the use of a Rotovap rotary evaporator in France: by lowering the pressure inside the still , the temperature at which the alcohol boils is reduced, which allows the distilled plants not to be cooked and thus guarantees the freshness of their flavors. Maceration time, botanical ratio, alcohol, distillation time, pressure and temperature depend on the botanical character. Once all the botanicals are distilled, they are mixed together with a neutral French grain alcohol. Audemus Spirits produces gin, liqueurs, bitters and hybrid spirits.
Umami Gin is made from capers from southern Italy, distilled at 45 degrees to preserve its fresh iodized aroma. This distillate is combined with an infusion of Parmigiano-Reggiano , an Italian cheese rich in glutamate (the molecule responsible for the (the tongue's ability to taste umami). It is combined with juniper, two other ingredients and a base of neutral grain alcohol, then the mixture is left to rest in an old cognac barrel for several months.
