Château Thivin - Cuvée Zaccharie 2023
Château Thivin is located in Mont-Brouilly , in Beaujolais . It belongs to the Geoffray family, which has been producing wines for 6 generations. Zaccharie and Marguerite Geoffray bought Château Thivin and its two hectares of vines around the estate on June 8, 1877. Each generation following them has contributed new plots to the construction of the estate and developed the cultivation and winemaking methods. The estate's vines are located mainly on the Côte de Brouilly and Brouilly Crus, but the family also produces white, rosé and sparkling Beaujolais vintages. The family is constantly looking to optimize cultivation practices, to ensure a perfect balance of the vineyard's ecosystem with healthy vines and grapes of optimal quality.
Cuvée Zaccharie is made from Gamay Noir with white juice, from old vines of 50 years. The harvest is entirely manual, the vinification is done by gravity. The maceration, partially in whole bunches, lasts from 13 to 15 days and is followed by a gentle pressing. The aging is done for a tenth in Burgundy barrels and for the rest in barrels of 1 to 5 years. The aging lasts 10 months in oak barrels .
