Domaine Cassagne et Vitailles - Les Homs 2022
Domaine Cassagne et Vitailles is located in Montpeyroux, in the Languedoc . The estate was founded in 2015 by two friends: Matthieu Rollin and Nicolas Seffusatti . The 7-hectare vineyard is divided into several plots, reflecting the diversity of the Mediterranean terroirs between Languedoc and Roussillon. The duo favors organic composts, controlled grassing, low yields and manual work. They practice biodynamics on plots replanted in mass selections. The harvests are late to push the ripeness and the small stainless steel vats isolate the juices from each plot. The cellar is built in Fontvieille stone blocks for its thermal inertia. The aging is long, mainly in barrels from the Chappin house (which supplies the largest Burgundy estates such as Coche-Dury and Romanée-Conti). The wines are aged for 12 to 36 months or more, then refined in concrete eggs.
Les Homs is made from Grenache from the plot of the same name. After a late harvest and a long vatting period, the wine is aged for 6 to 8 months in concrete eggs .
