Testamatta - Bibi Graetz 2021
Bibi Graetz is a wine producer based in Fiesole , in the hills northeast of Florence, Tuscany . The estate is particularly known for its flagship wine Testamatta, which means "Crazy Head". The property took its modern form in the mid-1990s when Bibi Graetz began to take an interest in the family vineyard, which until then had largely produced wine for family consumption. By 2001, Graetz had shifted to a more quality-oriented perspective and began looking for additional vineyard plots to lease in the area. The estate now has around 30 hectares of vines spread across 20 small plots of organic farming .
Testamatta is made from Sangiovese , grown in 5 vineyards: Siena, Lamole, Vincigliata, Londa and Montefili. The vines are between 35 and 50 years old, grown on a mixture of soils rich in galestro and clay. Natural fermentation takes place in open barrels, and 6 to 8 manual punch-downs are carried out per day. The wine is then aged for 30 months .
