Alice and Olivier De Moor - Chablis 1er Cru - Vau de Vey 2022
Domaine Alice et Olivier De Moor is located in Courgis , Burgundy . Alice is originally from the Jura region and met Olivier at a large Chablis estate where he was in charge of the vines. They both have degrees in oenology, and with their knowledge, they started their estate by planting three plots of Chablis in 1989, while still employed elsewhere. From 1995, they devoted themselves entirely to their 4 hectares of vines, which they expanded in 1996 by purchasing a large plot in Chitry. Alice and Olivier De Moor have been working their vines organically since 2005. In 2002, they replaced the large harvest bins with small crates where the grapes were not crushed by their own weight. In 2007, they built a large winery with high ceilings, allowing them to do all their cellar work by gravity. In 2008, they purchased a second-hand pneumatic press to process the grapes as gently as possible. No sulfur is used during the harvest or winemaking process. Since 2009, Alice and Olivier de Moor have also launched a wine trading business, "Le Vendangeur Masqué."
Chablis 1er Cru Vau de Vey is made from Chardonnay from plots acquired in 2017 by the De Moors.
