Clos des Fées - The Witches 2024
Domaine du Clos des Fées is located in the Côtes-du-Roussillon , at the foot of the Pyrenees. It was created by Hervé Bizeul in 1997, to live out his passion for wine. From April 1999, his wines were sold en primeur. The vineyard increased slightly, it has 7 hectares in production but only 15,000 bottles due to low yields. Today, the vineyard of Domaine du Clos des Fées extends over 30 hectares: 27.5 hectares planted with red and 2.5 hectares planted with white.
Les Sorcières du Clos des Fées is a blend of Syrah (50%), Grenache (30%) and Carignan (20%) . The Grenache and Carignan come from old vines aged 40 to 80 years, and the Syrah comes from young vines under 25 years old. The harvest is manual, followed by a pre-fermentation maceration at low temperature in 128 hectoliter stainless steel vats with daily pumping over. The macerations last 15 to 21 days with gentle extraction. Malolactic fermentation is complete. The wine is then aged in vats on fine lees for 8 months . A very light dose of sulfur is added at bottling.
