Domaine Aurore Bachelet - Pommard 2023
Domaine Aurore Bachelet is located in Santenay, south of the Côte de Beaune region in Burgundy . With a business school degree and a wealth of international experience, Aurore chose to reconnect with her roots in Burgundy. After training in viticulture and oenology, she spent five years perfecting her skills alongside her father, Vincent Bachelet. At the same time, she invested in developing her own estate. Aurore produces the two emblematic grape varieties of Burgundy: Pinot Noir and Chardonnay. For each vintage, she strives to respect the Burgundian identity with a vinification process that is as non-interventionist as possible.
Pommard is made from Pinot Noir , the vines of which are around 55 years old, grown on clay-limestone soil. After manual harvesting, the grapes are put into cold pre-fermentation vatting . Fermentation takes place in vats, with regular manual punching down and watering. The wine is aged for 12 months in oak barrels , then 5 months in stainless steel vats .
