The Domaine des Roches is located in Beaumont-en-Veron in the Chinon appellation. Alain and Jérome Lenoir (father and son) inherited the 3.5 hectares from Jérome's great-grandfather. The Cabernet Franc vines are around sixty-years-old and the soil provides the vine with only 20cm of soil, the roots will seek nutrients from the mother rock, very hard which makes the reputation of the wine of Chinon. The Chenin Blanc plot was purchased in the late 1950s. Customs recently appraised the vines as prior to 1900 and probably pre-phylloxeratic. Surrounded by woods and unplanted with any grape variety, this plot could have escaped the insect.
The harvest is manual and the grapes are destemmed before even returning to the cellar, which is then carried out very quickly to minimize the risk of oxidation. Cabernet Franc is transferred to very old (around 40 years) and large wooden barrels where the bunches are punched down with a pestle. Fermentation takes place with indigenous yeasts and then ages for 3 to 6 years in barrels. The level of sulfur added is 10 times below the current standard for natural red wines.
