Domaine François Chidaine - Les Argiles 2018
The Domaine François Chidaine covers 37 hectares. The Chenin Blanc reigns over the 20 hectares of Montlouis and the 10 hectares of Vouvray. The vines which thrive in more than fifty plots have been grown organically since 1992 and biodynamically since 1999. They are rooted on clay with flint soils and on clay-limestone soils which transmit to the grapes a palette of nuance.
The vineyard is biodynamically managed. No chemical phytosanitary products are used. The soils are ploughed. Honey plants and nematicides are planted in the rows. The preparations used come only from processed vegetable, animal and mineral materials.
Les Argiles is a cuvée made from Chenin Blanc (also called Pineau de Loire). The terroir is composed of deep clays and white chalk, only of a clay-limestone nature. After pressing, alcoholic fermentation is carried out by indigenous yeasts in demi-muids of 600 litres. It lasts up to 6 months and does not undergo malolactic fermentation. Aging is carried out in the same types of barrels, on fine lees.
